While there is plenty of bad news out there about businesses struggling to make it in a down economy, Tijuana Flats seems to be doing well.
The restaurant, which started in Orlando and was the creation of a University of Central Florida alum, is known for its Tex-Mex fare, including huge burritos and a hot sauce bar.
Franchise owner Steve Martin is opening a second Tijuana Flats in Sarasota at 3404 Clark Road in the former site of the Boogie Woogie record store. The new restaurant should open in October.
Martin's first Tijuana Flats, at 1635 S. Tamiami Trail, has been open since December 2002. He also has five restaurants in Pinellas County.
"We just couldn't be happier," Martin said. "People just love us here."
