On Monday, May 6, Tijuana Flats, famous for its fresh Tex-Mex food and unique ambiance, will open its second Boca Raton location at 20401 SR 7, in the Mission Bay Plaza.
The 2,200-square-foot restaurant will accommodate 72 guests indoors and 20 guests on the outdoor patio. This new location will feature Tijuana Flatsʼ fresh, made-to-order menu, a 15-pump hot sauce bar and the lively atmosphere patrons have come to expect from the Tex-Mex powerhouse. Anyone who has experienced Tijuana Flats knows about its brightly colored wall murals. On Saturday, February 23, the Tijuana Flats Just in Queso Foundation will be raising money for individuals, organizations and communities in need by hosting an afternoon fundraiser at World of Beer in Sarasota.
All proceeds from the event will benefit the Just in Queso Foundation, which uses money raised during events like this one to support military members and their families, children's organizations, disease research and treatment, and more groups and individuals in need.
WHAT: The Tijuana Flats Just in Queso Foundation Presents Cocktails For A Cause
WHEN: Saturday, February 23 from 2 p.m. to 6 p.m.

ORLANDO, Fla. (January 9, 2013) – Tijuana Flats employees get much more than just a paycheck and fun working atmosphere. The company strives to provide personal and professional growth opportunities for its employees as often as possible.
Employees submit an application stating why they feel they would be a great candidate to win the Tijuana Flats Leadership Development Scholarship. This year is the eighth year Tijuana Flats has provided deserving employees a $2,500 scholarship to be used toward college expenses for one semester, and the sixth time that Tijuana Flats has awarded scholarships to three recipients in one year. This scholarship is offered twice a year, once in the fall and once in the spring.
This year’s winners are
Cody is a junior at Seminole State College and plans to graduate in Fall of 2014 with a degree in Nursing. He works full time at the Sand Lake Road location and is very active in the community, participating in 5k runs for charity and volunteering with Tijuana Flats’ charity, the Just In Queso Foundation. Cody was selected because of his infectious attitude and desire to always do the best job he can, no matter the circumstances.
Nathalie is a Business Marketing major at the University of South Florida and intends to graduate in 2015. She has worked at our Westchase location in Tampa for the past three years. Nathalie was selected because she is hardworking, dependable and always willing to work as a team to get the job done. She has volunteered at several Just In Queso events and her positive attitude and strong work ethic set a great example for everyone with whom she works.
Amber is a junior at Northwest Florida State College and plans to graduate in 2014 with a degree in Elementary Education. Amber lives and breathes Tijuana Flats and exemplifies exactly what the brand’s core values are all about. Her standout personality is one-of-a-kind, and she takes the time to get to know her guests and is recognized all over town because of it. Amber was selected because she never gives up and makes the working environment a fun one that everyone wants to take part in.
In order to receive the Tijuana Flats Leadership Development Scholarship, employees must have a minimum of one year’s employment with the company and be enrolled full or part time in a state or community college. Nominees must also be active in their school and community, demonstrate a solid work ethic and strong leadership skills, and possess the attitude and passion that furthers the Tijuana Flats mission.

ORLANDO, Fla. (January 9, 2013) — Tijuana Flats fired up the 2012 holiday season by raising $92,140 for Kids Beating Cancer — nearly three times the total amount raised last year.
The money was raised through the sale of the restaurant’s “Smack My Ass & Call Me Santa!” hot sauce and, new this year, proceeds from a special dessert called Vixen's Holiday Ginger Chimi (a flour tortilla loaded with gingerbread cookie dough, lightly fried and smothered with homemade icing and holiday sprinkles).
The hot sauce was available for purchase from November 23 to December 24 at all of the restaurant’s nearly 90 locations and online at TijuanaFlats.com. $3 from each bottle sold was earmarked to go directly to Kids Beating Cancer.
“I know I say this every year, but it’s absolutely incredible how generous our guests and staff are,” said Tijuana Flats Owner and CEO, Brian Wheeler. “We’re thrilled to be able to donate anything we raise to Kids Beating Cancer, but are stunned that we nearly tripled the amount we raised last year. Thanks to everyone that donated!”

ORLANDO, Fla. (September 25, 2012) — For the sixth year in a row, the Tijuana Flats Just in Queso Foundation, which provides aid to individuals, communities and organizations in need, is teaming up with Estée Lauder to raise money for the Breast Cancer Research Foundation (BCRF).
From Friday, September 28 through Sunday, October 14, three dollars from every sale of Tijuana Flats Just in Queso Foundation charity hot sauce will be donated to the BCRF.
Retailing for five dollars a bottle, the Just in Queso hot sauce is available for sale at any of Tijuana Flats’ 83 locations nationwide as well as online at www.tijuanaflats.com.

ORLANDO, Fla. (September 6, 2012) – Tijuana Flats employees get much more than just a paycheck and fun working atmosphere. The company strives to provide opportunities for personal and professional growth for its employees as often as possible.
Each year, General Managers are asked to submit the employee(s) they feel would be a great candidate to win the Tijuana Flats Leadership Development Scholarship. This year is the eighth year Tijuana Flats has provided deserving employees a $3,000 scholarship to be used toward college expenses. And, for the fifth time, Tijuana Flats has awarded three scholarship recipients in one year.
This year’s winners are
Emily says she owes much of her success in school and in her community to Tijuana Flats and the core values working there has instilled in her. She’s studying occupational therapy and health sciences at the Florida Hospital College of Health Sciences. Emily was nominated because she knows the value of hard work and serves as a great example for other employees.
Carlee is a junior at Florida Atlantic University and plans to graduate in 2013 with a degree in Psychology. She works full time at the Cooper City location and has been assisting with opening new Tijuana Flats locations throughout South Florida. Carlee was nominated because of her dedication to the restaurant and her desire to use her experience and education to move up within the company.
Having worked for Tijuana Flats for nearly five years, Genesis is in her final year at Hillsborough Community College. She volunteers regularly with Tijuana Flats’ Just In Queso Foundation. Genesis’ professionalism day in and day out, along with her commitment to teamwork and the community, earned her a nomination.

ORLANDO, Fla. (August 21, 2011) — Earlier this month, the Tijuana Flats Just In Queso Foundation, a 501c3 charitable organization, held its annual fundraiser. This year’s event, titled “Share the Love, Feel the Music,” was a huge success raising $84,000.
Christian Service Center, an organization that partners with Orange County schools to provide food to students and their families when in need, will receive nearly $13,000 of the money raised at this event.
“The Just In Queso Foundation has recently become our partner over the last six months and we look forward to doing much more with them in the future,” said Executive Director of Christian Service Center Robert Stuart. “This money will provide 5,000 meals, ensuring that the children of Central Florida have plenty to eat and can focus on learning!”
The remaining $70,000 will go into Just In Queso’s fund that is used to provide aid to individuals, communities and other organizations in need. This charity is unique in that it collects funds in order to have money ready and waiting “just in case” a tragedy strikes.
“The Just In Queso Foundation supports individuals, families and other organizations during all kinds of ‘tragedies,” said Just In Queso Development Manager Ben Kuykendall. “Whether it’s helping those affected by natural disasters, individuals facing life-threatening medical illnesses, or even sending a little bit of home to our military overseas — Just In Queso is there.”

--Tex-Mex Restaurant Announces to Open 12-15 New Locations in 2012 and 15 in 2013--
ORLANDO, Fla. (January 20, 2012) – Tijuana Flats, known for its fresh Tex-Mex food and anything-goes atmosphere, announced today its plans to open 30 new locations by the end of 2013, with 12-15 of them being opened in Florida this year.
South Florida’s Oakland Park and a second Gainesville location are the first two Tijuana Flats scheduled for 2012—both opening this month.
The restaurant is planning to open the remaining 13 locations—mainly in South Florida—by the end of the year. These openings reflect the company’s previously announced plans to expand the Tex-Mex brand’s footprint in the South Florida area.
“The growth TIjuana Flats has seen over the past several years is something the company as a whole has worked very hard to achieve,” said Tijuana Flats Owner and CEO, Brian Wheeler. “And with that said, we’re not planning on stopping anytime soon. As long as we’re still welcomed and loved by guests, we’re going to continue grow and expand and give back to the communities we serve."
In 2011, Tijuana Flats opened seven new locations—six in Florida and one in North Carolina. These new locations accounted for nearly 600 total new jobs, spanning Jacksonville, Orlando, Tampa, Fort Lauderdale and Cary, NC.
In addition to the new openings, the restaurant chain also remodeled seven other locations during the year with upgrades ranging from dining room wall signage renovations to full-scale wall and counter replacements to energy-efficient kitchen equipment.

Tijuana Flats Announces Opening of Its First Oakland Park Location
ORLANDO, Fla. (January 3, 2012) - On Monday, January 16, Tijuana Flats, famous for its fresh Tex-Mex food and unique ambiance, opens its first location in Oakland Park at 5065 N. Dixie Highway.
This new location will feature Tijuana Flatsʼ fresh, made-to-order menu, a 15-pump hot sauce bar and all the lively atmosphere patrons have come to expect from the Tex-Mex powerhouse. The 2,400-square-foot restaurant will accommodate indoor and patio seating for more than 100 guests. Anyone who has experienced Tijuana Flats knows about its brightly colored wall murals. The mural at this location is no exception, portraying an alien invasion that has descended upon Oakland Park.

--Tex-Mex Restaurant’s Charity Reaches Highly Anticipated Milestone --
Since day one, Tijuana Flats, regarded for its mouth-numbing hot sauce and fresh Tex-Mex food, has always been very determined to give back to and support the communities it serves. One way it does this is via its not-for-profit foundation — the Just in Queso Foundation — who reached its $1-million-raised milestone at an event last week.
The “Cocktails For A Cause” event was held last Thursday night at Waitiki Retro Tiki Lounge on Wall Street in downtown Orlando. This annual event is a chance for supporters of the organization to come together and celebrate the accomplishments of the year. This year was incredibly special, as attendees helped the Foundation raise the $5,000 it needed to achieve its $1-million-donated milestone.
“Raising $1 million has been a lofty goal of the Just in Queso Foundation since we started the organization,” said Dede Franklin, president of the Just in Queso Foundation. “To be able to say that we’ve finally achieved that goal is amazing. We truly appreciate every dollar donated that allows us to realize our mission, which is to help people in need, often when help is least expected.”
In addition to events like “Cocktails For A Cause,” the Just in Queso Foundation raises funds through the sale of the “Just in Queso” charity hot sauce, as well as Tijuana Flats’ special-edition holiday “Smack My Ass and Call Me Santa!” hot sauce, for which $3 from the sale of each bottle is donated directly to charities that are in need. The Foundation also accepts tax-deductible donations from other organizations and individuals.

On Thursday, December 8, the Tijuana Flats Just in Queso Foundation will be raising money for individuals, organizations and communities in need by hosting a happy hour fundraiser at Wall Street Plaza’s Waitiki Lounge in Downtown Orlando.
This event is a very special occasion for the Just In Queso Foundation as it is only $5,000 away from achieving its $1 million raised milestone. The organization hopes to collect its millionth dollar at this event while celebrating not only the impending milestone, but also the incredible support and generosity received up to this point.
Attendees will enjoy live music, cocktails and a raffle. All proceeds from the event will benefit the Just in Queso Foundation, which uses money raised via events like this one, to support great causes like children's organizations, breast cancer research and other people and groups that are in need in the community. This event is the perfect opportunity to bring friends and families together to demonstrate community support.

Tijuana Flats and the company’s charity, the Just in Queso Foundation, are kick-starting this holiday season by giving back to children. The two are doing this by donating $3 from each bottle sold of its “Smack My Ass & Call Me Santa!” holiday hot sauce to four very deserving charities.
The hot sauce is available for purchase at all of the restaurants’ 78 locations and online at TijuanaFlats.com. Now in its 16th year, this initiative now has an added twist — consumers will be voting to determine how much of the proceeds each charity will receive.
Voting will take place at http://www.TijuanaFlats.com/Vote, and the more votes a charity gets, the higher percentage of proceeds they will receive. First place will receive 50 percent of proceeds, second place 25 percent, third place 15 percent, and fourth place 10 percent.

--Tijuana Flats' Just in Queso Foundation Announces Donation Results to the Breast Cancer Research Foundation--
ORLANDO, Fla (October 26,2011) -Tijuana Flats' Just in Queso Foundation, which provides aid to individuals, communities and organizations in need , presented its fifth annual Breast Cancer Awareness fundraiser. In just two weeks, the Just in Queso Foundation raised in remarkable $39,506 for the Breast Cancer Research Foundation (BCRF), supporting its mission to achieve prevention and a cure for breast cancer.
From September 30 to October 16, Tijuana Flats donated $3 of every bottle sold from its Just in Queso charity hot sauce sales to the BCRF. Customers could purchase the hot sauce both online and in the restaurant's 76 locations nationwide. Generous individuals also made personal donations to the cause.
Tijuana Flats' Jacksonville location (13529 Beach Boulevard Suite) raised the most money. The hardworking team and dedicated customers were able to raise nearly $2,500 to benefit the BCRF. Coming in a close second was the Tijuana Flats location in Miramar, Fla.(14633 Miramar Parkway), raising nearly $2,000.
"Over the past 5 years, we've proudly raised over $190,000 to BCRF," said Just in Queso President Dede Franklin. "Each bottle purchased by our loyal customers allows us to help BCRF achieve its goals and especially its mission of prevention and finding a cure."

Tex-Mex Restaurant Awards its Annual Leadership Development Scholarship
ORLANDO, Fla. (August 17, 2011) – Tijuana Flats employees get much more than just a paycheck and fun working atmosphere. The company strives to provide opportunities for personal and professional growth for its employees as often as possible.
Each year, the company asks General Managers to submit the employee(s) they feel would be a great candidate to win the Tijuana Flats Leadership Development Scholarship. This year is the seventh year Tijuana Flats has provided deserving employees a $3,000 scholarship to be used toward college expenses. This is the fourth time that Tijuana Flats has awarded three scholarship recipients in one year.
This year’s winners are
Ashleigh is a senior at Florida Atlantic University and plans to graduate in 2012 with a degree in Sociology. She often travels to train employees at newly opened restaurants. Ashley was nominated because of her great attitude and genuine approach to customer service, both of which are infectious to other employees.
Having worked for Tijuana Flats for more than three years, Chrysta is in her final year at UCF, and plans to graduate with a degree in Marketing and Sports Business Management. Chrysta’s professional dedication, day in and day out, along with her commitment to teamwork earned her a nomination.
Carrie has also been working for Tijuana Flats for three years. She is beginning her final year at UCF where she is studying Psychology. Carrie was nominated because she embodies the Tijuana Flats brand and lifestyle. She takes the time needed to get to know guests, and they come back over and over because of it.
“All of this year’s nominees were spoken very highly of and we’re so glad to have them all as a part of the Tijuana Flats team,” said Brian Wheeler, Tijuana Flats president and CEO. “Ashleigh, Chrysta and Carrie were selected because they all truly personify the brand with their attitude and enthusiasm, making our customers’ experiences unforgettable. The 47th annual Summer Beach Run and its unforgettable post-race celebration will be hosted by Tijuana Flats. Ashleigh is a senior at Florida Atlantic University and plans to graduate in 2012 with a degree in Sociology. She often travels to train employees at newly opened restaurants. Ashley was nominated because of her great attitude and genuine approach to customer service, both of which are infectious to other employees.
Having worked for Tijuana Flats for more than three years, Chrysta is in her final year at UCF, and plans to graduate with a degree in Marketing and Sports Business Management. Chrysta’s professional dedication, day in and day out, along with her commitment to teamwork earned her a nomination.
Carrie has also been working for Tijuana Flats for three years. She is beginning her final year at UCF where she is studying Psychology. Carrie was nominated because she embodies the Tijuana Flats brand and lifestyle. She takes the time needed to get to know guests, and they come back over and over because of it.

On Monday, July 25, Tijuana Flats, famous for its fresh Tex-Mex food and unique ambiance, opens its new Orlando location at 7560 West Sand Lake Road in the Plaza Venezia shopping center. This is the company’s eighth Orlando and 29th Central Florida Tijuana Flats location.
The latest Orlando location will feature Tijuana Flatsʼ fresh, made-to-order menu, a 14-pump hot sauce bar and all the lively atmosphere patrons have come to expect from the Tex-Mex powerhouse. The 3,100 square-foot restaurant will accommodate indoor seating for 94 guests and outdoor seating for 28 guests. Anyone who has experienced Tijuana Flats knows about its brightly colored wall murals. The mural at this location is no exception, dipicting an eleborate, zombie pirate shipwreck scene.
This is Tijuana Flats’ first Central Florida opening for 2011.
The new Orlando Tijuana Flats will incorporate energy efficient equipment, taking some initial steps in becoming more environmentally cautious. They include:

Restaurant’s Just in Queso Foundation Holiday Hot Sauce Raising Money for Pediatric Cancer Foundation
ORLANDO, Fla. (Monday, November 29, 2010) – Tijuana Flats kick starts its 15th holiday season by donating one hundred percent of the proceeds from the sale of its five-dollar bottle of “Smack My Ass & Call Me Santa!” holiday hot sauce to the Pediatric Cancer Foundation. The special edition sauce, which is a part of the restaurant’s Just in Queso Foundation, is now available for sale at all restaurant locations and online at www.tijuanaflats.com.
The goal for this year’s holiday charitable initiative is to raise $50,000 throughout 73 locations in Florida, Indiana, North Carolina, Pennsylvania and Virginia. In 2009, Tijuana Flats raised just over $45,000 for Building Homes for Heroes with the support of their then 70 locations.

(Wednesday, October 20, 2010) – In just two weeks, Tijuana Flats’ Just in Queso Foundation, which provides aid to individuals, communities and organizations in need, raised an impressive $43,018 during its fourth annual Breast Cancer Awareness fundraiser. The fundraiser benefits The Breast Cancer Research Foundation (BCRF), supporting their mission to achieve prevention and a cure for breast cancer.
From Friday, October 1 to Sunday, October 17, the money was raised through one hundred percent of both in-store and online profit of the sales of the Tijuana Flats’ Just in Queso Foundation’s charity hot sauce, retailing for $5.00 per bottle throughout 72 locations in Florida, Virginia, North Carolina, Indiana and Pennsylvania. Individual customers also made personal donations for the cause.
The top selling store during the BCRF fundraiser was the Fort Walton Beach location, located at 39 Eglin Parkway NE in Fort Walton Beach, Florida. General Manager Vera Mae and her hard working team sold $3,671.55 worth of hot sauce to be put towards the overall earning.

From Friday, October 1 through Sunday, October 17, one hundred percent of all proceeds from the sale of Tijuana Flats Just in Queso Foundation charity hot sauce will be donated to the BCRF.
Retailing for $5.00 a bottle, the Just in Queso hot sauce is available for sale at any of Tijuana Flats’ 72 locations nationwide as well as online at www.tijuanaflats.com.

The Tijuana Flats Just in Queso Foundation recently donated $3,399.28 to the Curtis/Kocab Memorial Fund, a Tampa Police Department memorial fund for the families of fallen Officers Jeffrey Kocab and David Curtis.
Every Monday in August, five Tijuana Flats locations in the Tampa market donated 10 percent of its sales, as well as the proceeds from all sales of its Just in Queso charity hot sauce, to the fund.
"We cannot thank our community enough for the outpouring of support during this very difficult time,” said Tampa Police Chief Jane Castor. “I want to personally thank Tijuana Flats for continuing to raise money for the families for so many weeks after our tragic loss. Their support means a lot to the men and women in blue."

ANNUAL CONFERENCE AWARDS CEREMONY
Tijuana Flats, notorious for its mouth-numbing hot sauce and fresh Tex-Mex food, recently recognized a number of individuals for their outstanding commitment and dedication at an awards ceremony during the 8th annual Tijuana Flats Business Review and Celebration. The company hosted the awards ceremony to recognize the employee and parter efforts that help create an enjoyable working environment and a memorable dining experience.
“A key element of any company’s success is the customer service it provides,” said Tijuana Flats’ founder, Brian Wheeler. “The employees and partners that were recognized enable Tijuana Flats to provide excellent customer service and ensure the overall success of the restaurant, year after year.”
The Tijuana Flats 2009 Partner of the Year was awarded to Orlando & Mary Jo Sorrento. Marie Crawford, general manager of the Altamonte Springs , Fla. location, received the Quality of Operations Award for the pride she takes in the level of guest service she provides at her location.
Michael Slattery, general manager of the Deerfield Beach, Fla. location, received the Operator of the Year award for exemplifying true leadership and professionalism while serving as a mentor for fellow employees.
The 2009 Vendor of the Year went to Jose Solis of La Chiquita Tortilla Company.
During the celebration, Tijuana Flats honored six employees who have worked with the company for ten years: director of research and development, Jim Stitt; people development supervisor Mary Ghezzi; area supervisor, Matt Weekley; managing partner, Adam Scoggins; area supervisor Joey Holland; and general manager, Adam Moore.
Tijuana Flats also honored 12 employees who have worked for the company for five years. Eight employees received the “Big Taco” award for showing tremendous leadership abilities during their career with the company.

Famous Tex-Mex Restaurant Awards its Annual Leadership Development Scholarship
Providing opportunities for personal and professional growth while encouraging a fun working environment has been part of the Tijuana Flats strategy for quality customer service since the company was founded in 1995. Further encouraging staff success, Tijuana Flats recently awarded the sixth annual Tijuana Flats Leadership Development Scholarship to three of its most deserving employees: Mark Fiala, Tim Williams, and Ryan Fields. Each recipient receives $3,000 to be used for their college expenses. This is the third time that the restaurant has awarded three scholarship recipients in one year.
"At Tijuana Flats, we understand that customer service is key to having a successful establishment," said Brian Wheeler, Tijuana Flats president and CEO. "Because of this principle, we ensure that we are always employing candidates who will contribute a positive energy to our restaurants. Mark, Tim, and Ryan are the type of team members that customers want serving them, and are positive influences to the other employees they work with." Mark Fiala, a corporate trainer from the restaurant's Westchase location in Tampa, Fla., is currently enrolled at the University of South Florida. He is a back of house trainer and has helped open five stores in Florida and
North Carolina. Fiala was nominated by his general manager, Anthony Zupo who said, "Mark has done so much to help not just the store, but Tijuana Flats as a whole."
In her nomination letter, General Manager, Lyndsey Chapman said Tim Williams "not only leads in the restaurant with the everyday use of our core values and standards, but also flows these values seamlessly into his school and personal life." Williams, a trainer from the restaurant's Tallahassee, Fla location, currently attends Florida State University. He plans to graduate in 2010 with a degree in physics and math.
Ryan Fields, a back of house employee from the restaurant's Aloma location in Winter Park, Fla., has been a part of the Tijuana Flats team for nine years. "Not only does Ryan perform every task extremely well and with enthusiasm, he always looks for ways to improve the restaurant-always going above and beyond what is expected of him," said managing partner, Joe Jeffries in his nomination letter for Fields. This fall, he will begin his junior year at the University of Central Florida pursuing a bachelor's degree in civil engineering.
To receive the Tijuana Flats' Leadership Development Scholarship, employees must have a minimum of one year employment with the company and be enrolled full or part-time in a state or community college. In addition, nominees must be active in their school and community, demonstrate a solid work ethic and strong leadership skills, and possess the attitude and passion that furthers the Tijuana Flats mission. In order to be considered for the scholarship, employees must be nominated by their general manager, and both the nominee and the general manager must submit a one-page essay describing the reasons the employee deserves the scholarship.

Tijuana Flats Kicks Off Fourth Annual Music Contest
Back by popular demand, Tijuana Flats, notorious for its fresh Tex-Mex food and mouth-numbing hot sauce, is calling for all unsigned vocal artists, bands and musical groups to enter the 2010 "Rock Out With Your Guac Out!" Music Contest, where 12 winners will receive a chance to have their music heard by audiences all over the country!
From now until Saturday, July 31, 2010, unsigned artists and bands from all musical backgrounds are encouraged to submit up to three of their most upbeat and fun songs to www.tijuanaflats.com/rockout. A panel of judges from Tijuana Flats will select the top 12 most original artists and bands to be featured for one month each on www.tijuanaflats.com, the restaurant's Webby award-winning Web site, which receives an average of 43,000 unique visitors each month.

Tijuana Flats Announces Opening of Its Orange City
On Monday, April 5, Tijuana Flats, famous for its fresh Tex-Mex food and unique ambiance, opens its Orange City location at 1169 Saxon Blvd.
The Orange City location will feature Tijuana Flats' made-to-order menu, a 14-pump hot sauce bar and all the lively atmosphere patrons have come to expect from the Tex-Mex powerhouse.
The 2,400-square-foot restaurant will accommodate seating for 76 guests. Anyone who has experienced Tijuana Flats knows about its brightly colored wall murals. The mural at this location is no exception, a sci-fi comic book inspired mural with vivid blue, green, pink colors.

Tijuana Flats Announces Opening of Its Palm Beach Gardens Location
On Monday, March 15, Tijuana Flats, famous for its fresh Tex-Mex food and unique ambiance, opens its Palm Beach Gardens location at 11608
US Highway 1.
The Palm Beach Gardens location will feature Tijuana Flats' made-to-order menu, a 14-pump hot sauce bar and all the lively atmosphere patrons have come to expect from the Tex-Mex powerhouse. The 2,300-square-foot restaurant will accommodate indoor seating for 65-70 guests and outdoor seating for 26 guests. Anyone who has experienced Tijuana Flats knows about its brightly colored wall murals. The mural at this location is no exception, incorporating a cosmic-space sci-fi design.
"We are continuing our South Florida expansion with Palm Beach Gardens, our most ʻnorthernʼ South Florida location to open" said Tijuana Flatsʼ CEO, Brian Wheeler. "We are excited to ʻspice upʼ the city with our great, laid-back atmosphere and high quality food and hope to become a staple in the local community that everyone enjoys."
In addition, the restaurant incorporates energy efficient equipment, taking some initial steps in becoming more environmentally cautious. They include:

"This has been such an incredible journey," says Brian Wheeler.
Inspired by Burrito Brothers in Gainesville, he opened the first Tijuana Flats in 1995 in Winter Park. Today, the fast-casual Tex-Mex chain has 70 locations in Florida, Indiana, North Carolina, Pennsylvania and Virginia. The newest Tijuana Flats is scheduled to open in Orlando's College Park in the spring and the company is planning to open seven more restaurants in Florida and North Carolina by the end of this year.
"Looking back, I was in the right place at the right time," says the UCF alum. "Chipotle and Qdoba were thriving on the West Coast."
The 40-year-old former UPS driver, who had absolutely no restaurant experience, has learned from his successes and mistakes. The most important lesson he learned is to embrace the help and knowledge of a mentor, he said.
"Find someone to show you the ropes. I was blessed to have [Camp] Fitch, "a former executive with Bennigan's and the S&A (Steak & Ale) Corp. and partner and owner of several Hops Grill & Brewing restaurants.
"And no matter what you achieve, there is no standing still," says Wheeler. ?Keep working at your core business."

Burrito lovers rejoice! With their biggest menu roll out in their 15 year existence, fast-casual Tex-Mex restaurant Tijuana Flats welcomes half a dozen new menu options to the South Florida Mexican food-loving masses starting today.
All six new items were featured items in test stores throughout the Central Florida area for three months before being added to the menu. Tijuana Flats Director of Marketing Ashley Montgomery said that menu reviews are conducted yearly where slight revisions are made, but bigger menu changes are done every 2-3 years.
The newly added "signature burritos" feature the Tijuana Flats take on other classic dishes. The Steak & Cheesy Burrito, a Tex-mex version of a classic philly cheese steak, is filled with seasoned steak, grilled onions, peppers and topped with mozzarella cheese.
The signature burritos include the most popular dish during menu testing, the Bangin' Chicken Burrito. Crispy chicken tossed in Tijuana Flat's signature Smack my Ass Bangin' Chicken sauce and loaded with grilled onions, peppers, tomatoes, cheese and ranch dressing. The Blackened Chicken Caeser Burrito is also new to the group.

Also added is the Chips & Beefy Queso dip, which is Tijuana's delicious classic cheese "queso" dip mixed with fresh ground beef. A test store favorite is the Tres Tacos, where guests can add a third taco to the ever-popular Dos Tacos. Now a permanent menu item are the Rice Bowls - a large, whole wheat fried tortilla shell loaded with rice, black beans, grilled onions, peppers, tomatoes, green onions, salsa and your choice of meat.
Also on deck is the Power Lite option, where guests can order entrees at 500 calories or less. With options of a whole wheat tortilla, low-fat cheese and fat-free sour cream, Montgomery says it's an option they established for their "health-conscious" guests.
There are eight South Florida locations, with three more slated to open this year.

Tijuana Flats, famous for its fresh Tex-Mex food and anything goes atmosphere, launches an updated menu today, including new appetizer and entree options as well as three new signature burritos.
After testing at select Tijuana Flats locations over the past few months, the signature burritos, also known as "Big Bombinʼ Burritos," are now a permanent addition to the fastcasual's menu. They include:

"JUST IN QUESO" FOUNDATION RAISES OVER $40,000 FOR BUILDING HOMES FOR HEROES
Tijuana Flats fired up the 2009 holiday season by raising $46,417 for Building Homes for Heroes through the sale of the restaurant's five-dollar bottle of "Smack My Ass & Call me Santa!" holiday hot sauce.
The special edition sauce is part of the restaurant's "Just in Queso" Foundation, which provides aid to individuals, communities and organizations in need.
The money raised will be used to remodel an Orlando soldier's home who lost his leg fighting while on a mission to rescue Marines that were under attack overseas.
"Tijuana Flats would like to thank every customer who bought a bottle of our holiday sauce this season. Because of them, we are able to provide a true hero with a home that will fit his needs," said Brian Wheeler, Tijuana Flats owner.
"Smack My Ass & Call me Santa!" was sold between November 27 and December 24, throughout the restaurant's 70 locations in Florida, Indiana, North Carolina, Pennsylvania and Virginia.
Building Homes for Heroes provides individuals, corporations and others with an opportunity to help the country's severely wounded and disabled veterans and their families rebuild their lives by constructing homes to meet their needs.
"To date, we have helped five military families along the road to recovery, with plans to help four more over the next two years, two of which are in the state of Florida," said Andrew McClure, Chief Operating Officer for Building Homes for Heroes. "With support from amazing organizations like Tijuana Flats, we hope to build many more homes and dreams."

Tex-Mex Restaurant Announces 2010 Expansion Plans
Tijuana Flats, known for its fresh Tex-Mex food and anything goes atmosphere, announced today its plans to open eight new restaurants throughout Florida and North Carolina by the end of this year. Orlandoʼs College Park and Palm Beach Gardens are the first two Tijuana Flats scheduled for 2010-both opening in March.
The restaurant is planning to open the remaining six locations-mainly in South Florida and North Carolina-by the end of the year. These openings reflect the companyʼs previously announced plans to expand the Tex-Mex brand in to South Florida and North Carolina over the next few years.
"With 10 locations between the two, the communities of South Florida and North Carolina have really welcomed us over the years," said Tijuana Flats owner, Brian Wheeler. "There have been many positive responses about the continued expansion plans in those markets and we are confident that we will continue to become a valid part of their local community just like we are in our existing markets."
In 2009, Tijuana Flats opened 10 new locations-nine in Florida and one in North Carolina.

Christmas Day in our Communities
This season Tijuana Flats wanted to wish everyone a happy holiday. Each market collaborated a Christmas day plan to show our communities our appreciation. These are contributions from the following markets:
-Jacksonville feed 150 people at local clinics and hospitals.
-Tallahassee catered the Tallahassee Police Department
-Coconut Creek delivered food to Coconut Creek Police station.
-Miramar delivered to the Miramar West Fire Rescue Station.
-Deerfield catered at the North Broward Medical Center.
-Commercial catered the emergency room at the University Medical Center.
-Summerlin catered food to their local fire station and hospital.
-Brandon catered 2 floors at the Brandon hospital.
Other locations in Tampa/St. Petersburg/Sarasota area collected just over 250 lbs of food to donate to the Metropolitan Ministries. Within that they collected the items to provide 11 families everything they will need for a full holiday meal with all the fixin's.

Canned Food Drive
Canned Food Drive held for 13 Tijuana Flats locations, throughout in Tampa, St. Petersburg and Sarasota area. These stores offered a free beverage to any non perishable food item brought it. They managed to collect just over 250lbs of food to donate to the Metropolitan Ministries. With this donation they were able to provide 11 families everything they will need for a full holiday meal with all the fixin's.

Restaurant's Just in Queso Foundation Holiday Hot Sauce is Raising Money for Building Homes for Heroes
Tijuana Flats kick starts this holiday season by donating 100 percent of the proceeds from the sale of its five dollar bottle of "Smack My Ass & Call me Santa!" holiday hot sauce to Building Homes for Heroes. Dat'l-Do-It Datil Pepper Hot Sauce, Louisiana Swamp Scum, Lizard's on the Bayou Gila Venom and Screamin' with Torture are just some of the unique sauces you might find at Tijuana Flats, a restaurant created by UCF alumnus Brian Wheeler.
Wheeler graduated in 1995 with a degree in marketing. That same year he opened his first restaurant in Winter Park, after a $10,000 loan from the bank and a $20,000 loan from his parents.
Wheeler attended UCF after he spent two years at Santa Fe Community College in Gainesville.
"By the time I was at UCF I was a junior, and after six years of partying and going out in Gainesville, I was ready to focus," Wheeler said.
Wheeler was always interested in business and intrigued by the idea of creating a brand.
"I fell in love with the concept of creating and I knew I wanted to have my own business. Majoring in marketing fit that," Wheeler said.
The idea to create Tijuana Flats came from hanging out in Gainesville. Wheeler used to go to a lot of the bars and restaurants around campus. He remembers a restaurant called Burrito Bros., especially.
"It used get really busy for such a small place, but their menu was really simple" he said.
He decided he wanted to open up his own Tex-Mex restaurant. He worked hard on the recipes he wanted to include and used some of the training he received from UCF to open his restaurant. While at UCF, one of his professors assigned a group project to create a fictitious business and gave him a format to create it. He used the same format to launch Tijuana Flats the year he graduated.
Wheeler now owns 70 restaurants throughout the southeast United States. His company built eight or nine restaurants this past year and has plans to open about the same amount within the next year.
His dad, Chester Wheeler, is retired and now works with him, helping out with the financial side of the business. He said Brian used to work for UPS and expressed to him that he didn't want to do that for the rest of his life. Brian showed him his business plan for the restaurant, which persuaded Chester to lend him the money to help out with the business venture.
"I don't think anybody thought it would do so well. It started off as just a little hole in the wall," Chester Wheeler said.
Tijuana Flats has also created a separate company, Tijuana Flats Hot Food Inc., to produce sauces for the restaurant and to sell unique hot sauces to the public. About 80 of the sauces sold on the Web site are Tijuana Flats originals, including his trademark brand, Smack My Ass and Call Me Sally.
"The idea for the name of my hot sauce came from a Friends episode," Wheeler said. "Courtney Cox was cooking for a guy and he had just got high before and was acting all goofy. At one point he said smack my ass and called me something. I don't really remember what the something was, but for some reason I got smack my ass and call me Sally."
Wheeler has also kept a lot of his original staff that started out with him at the first restaurant. Gerard Salerno was first hired as a prep cook at the first Tijuana Flats location. He is now the area supervisor for South Florida and is in charge of eight locations.
He remembers walking in and seeing Brian hard at work, in the back of the kitchen cooking, the day he applied for a job.
"When I walked in there and got hired, Brian was really working his tail off. So I knew it would be something, but I didn't know it would go this far," Salerno said.
Considering the economic recession, Wheeler said he is very fortunate that his restaurant is different from the high-end restaurants like steak houses. He said his restaurant falls into a category where people can go out to eat for a reasonable price, so the recession hasn't slowed business down yet.
Wheeler found a mentor three years after he started his business and advises students in college to find a mentor now.
"Even if it's for free, find someone in your field to be your mentor," he said. "There's nothing worse than leaving college with only what you learned in your books."

Tijuana Flats Announces Opening of Second Sarasota Location
ORLANDO, Fl - Famous for its fresh Tex-Mex food andunique ambiance, Tijuana Flats fire off the opening of its second Sarasota location at 3404 Clark Road with weeklong food and drink specials.
The newest addition, which opens on Monday, October 26, joins its sister restaurant on South Tamiami Trail. Currently, the Orlando-based, fast-casual, Tex-Mex restaurant has 69 locations throughout the country. The Clark Road location, the restaurant's 70th location, will be especially welcoming to local fans who wanted a Tijuana Flats near the southern part of the city.
"Our fans wanted us closer, and we listened," said Tijuana Flats Joint Venture Partner, Steve Martin. "We love ʻspicing up' Floridaʼs West Coast with our great, laid-back atmosphere and high quality food."
The Clark Road location will feature Tijuana Flats' made-to-order menu, its signature 14-pump hot sauce bar and all the lively atmosphere patrons have come to expect from the Tex-Mex powerhouse. The 1,800-square-foot restaurant will accommodate indoor seating for 64 guests
and outdoor seating for more than 35 guests. Known for its brightly colored murals, Tijuana Flats continues this tradition at its newest location. With three new characters created by the company's muralist, Sarasota customers will be pulled into into this larger-than-life montage.
In addition, the restaurant incorporates energy efficient equipment to support the company's
- Light Emitting Diode (LED) lamps that offer substantially better energy balance than traditional incandescent bulbs
- An Energy Management System (EMS) hood which drastically reduces energy usage
- Solar powered timers in the kitchen
- Low flow toilets that significantly reduce water usage
- Front of the house tile is made from 40 percent pre-consumer recycled materials
- A tankless and regular water heater
To commemorate the opening, Tijuana Flats has planned weeklong specials that include $1.50 Coronas from Monday, October 26 to Friday, October 30. Ortega businesses are counting on military expansion;
The restaurants and other stores cater to a military clientele.
About a dozen uniformed military personnel recently chowed down at Tijuana Flats in Ortega around noon.
Among them was Lt. Cmdr. Steve Mauro, who said he and fellow Jacksonville Naval Air Station employees frequent the nearby burrito joint for its good grub and twice-weekly military discounts.
"When making a decision on where to eat lunch, it's nice to go where people recognize you," Mauro said after finishing off a red sauce-soaked burrito.
Tijuana Flats, which opened about two years ago at 5907 Roosevelt Blvd., caters mainly to military.
"By far, the military keeps us going. And it feels great to give back to them," said Scott Benson, assistant manager of Tijuana Flats in the South Ortega Village shopping center.
Benson and other Ortega-area business owners eagerly await the Navy's expansion plans expected to bring thousands more troops and up to 450 military housing units within a year, off base, across the street from South Ortega Village.
Meanwhile, another boost may come from an $829,000 Venetia Town Center project slated to begin in February, according to Kenny Logsdon, senior city planner. The beautification project includes new street lights and sidewalks. It also involves redesigning the fork on Roosevelt Boulevard at Ortega Boulevard to slow traffic that sometimes barrels down that residential street.
Clint Murphy, a broker, developer and president of Murphy Land and Retail Services Inc., is thrilled about the developments to come in Ortega. Two years ago, Murphy built the South Ortega Village, a 9,600-square-foot shopping center north of Jacksonville NAS.
"Ortega is one of Jacksonville's most stable areas. It's got a strong residential element and more than 30,000 federal jobs that aren't going away.
That work force has to eat, rent homes," said Murphy, adding that Ortega has one of the lowest unemployment rates in the Jacksonville area.
When construction of the Super Target began to the south, Murphy decided to buy 1.5 acres on Roosevelt, formerly home to a manufactured home sales office. He's filled it with tenants with two bays left.
Willard's Barbecue Junction and Tuptim Thai Cuisine are slated to open by Nov. 1. Both of those owners said they are totally optimistic.
At Tijuana Flats, army boots hang from the ceiling, and camouflage uniforms and medals adorn the walls. There are thank-you letters from troops overseas to restaurant owners for their hot sauce care packages.

Flats' locations jumped from table to table shooting photographs of military visitors to frame and hang on the walls. She said the restaurant also caters events on base and throws welcome parties to new troops coming in.
"We want them to be pumped up to come here,” Ostromecki said. "We visit the base often to give out coupons, free chips and salsa. We go out of our way to visit them. We want them to feel welcomed, comfortable and appreciated. We're trying to make this their home away from home."
One uniformed lunchgoer, Navy reservist Peiny Allerton, called it a business ploy.
"I've seen a lot of places with the military motif," she said. "Maybe if the owner was a veteran, this would be more sincere."
However, most others interviewed said Tijuana Flats is appreciated on base.
"It's really nice, convenient," said Chief Petty Officer Craig Wallace, who eats at least twice a week at Tijuana Flats. "I love it here."

ORLANDO, Fl- The Tijuana Flats Just in Queso Foundation, which provides aid to individuals, communities and organizations in need, is teaming up with Estée Lauder up for its third annual Breast Cancer Research Foundation (BCRF) fundraiser.
From Thursday, October 1 through Sunday, October 11, one hundred percent of all proceeds from the sale of Tijuana Flats Just in Queso Foundation charity hot sauce will be donated to the BCRF.
Retailing for $5.00 a bottle, the Just in Queso hot sauce is available for sale at any of Tijuana Flats' 68 locations nationwide as well as online at www.tijuanaflats.com. This year, Tijuana Flats is challenging its company, staff and customers by setting the goal to $15,000 for the third annual fundraiser.
"In the last two years, the Just in Queso Foundation has raised over $75,000 for BCRF," said Dede Franklin, president of the Just in Queso Foundation. "Together with BCRF's mission to achieve prevention and a cure for breast cancer, we believe it is possible that a cure can and will be found in our lifetime, and we're delighted to do our part for a third year in a row."

ORLANDO, FL- On Monday, September 21, Tijuana Flats, famous for its fresh Tex-Mex food and unique ambiance, opens its first Raleigh location at 1310 E. Millbrook Road.
Currently, the Orlando-based, fast-casual, Tex-Mex restaurant has 67 locations throughout the country, including one location in Charlotte, North Carolina. The restaurant plans to open six to eight additional locations throughout Raleigh and its surrounding suburbs over the next four years.
"Since Raleigh continues to expand in population and size, it makes it a desirable location for our restaurant," said Tijuana Flats' CEO, Camp Fitch. "We are excited to 'spice up' the city with our great, laid-back atmosphere and high quality food and hope to become a staple in the local community that everyone enjoys."
The Raleigh location will feature Tijuana Flats' made-to-order menu, a 14-pump hot sauce bar and all the lively atmosphere patrons have come to expect from the Tex-Mex powerhouse. The 2,300-square-foot restaurant will accommodate indoor seating for 65-70 guests and outdoor seating for 24 guests. Anyone who has experienced Tijuana Flats knows about its brightly colored wall murals. The mural at the latest location is no exception, incorporating a cosmicspace sci-fi design.
In addition, the restaurant incorporates energy efficient equipment, taking some initial steps in becoming more environmentally cautious. They include:
- Light Emitting Diode (LED) lamps that offer substantially better energy balance than traditional incandescent bulbs
- An Energy Management System (EMS) hood which drastically reduces energy usage
- Solar powered timers in the kitchen
- Low flow toilets that significantly reduce water usage
- Front of the house tile is made from 40 percent pre-consumer recycled materials
- A tankless and regular water heater
To commemorate the opening, Tijuana Flats is offering every guest who comes in during opening week a chance to win one of four $250 gift cards and other Tijuana Flats prizes.

Tijuana Flats, an Orlando, Fla.-based Tex-Mex chain, announced it has opened its 68th location in Ocala, Fla., a city that resides between Orlando and Gainesville, Fla. according to Ocala.com.
To help celebrate its newest opening, Tijuana Flats plans to donate 20 percent of its proceeds to the Marion Therapeutic Riding Association, an Ocala organization that uses horses to assist in the treatment of mentally disadvantaged children and adults.
The Tijuana Flats restaurant concept serves Tex-Mex food selections that include chimichangas, tacos, flautas, quesadillas and burritos. The restaurant kitchen prepares each meal fresh to order.
Tijuana Flats is highly recognizable for its 15 sauces that are ranked by Scovilles, which is the measurement of the heat in any given pepper. With memorable names like "sissy," "oh, lord, don't take me now!" and "smack my @#! and call me Sally," the company has created a unique niche eatery where they claim that some things might offend you, but the food won't be one of them.
Speaking further with DailyVista, Marketing Manager Brandy Blackwell said that Tijuana Flats truly prides itself in its customer service.
Though patrons only pay for fast casual dining, she said that the full service they receive at each location is beyond what is expected for this type of eatery.
"Our menu has a wide variety. We have a large selection of different entrees and healthy options like low-fat cheese and sour cream, and we have wheat options for the tortillas," she said. "Our food is always fresh - the salsa and guacamole is made fresh daily, and thrown out daily if it's not used. We don't have microwaves and our food won't sit in a walk-in freezer for days. It just looks and tastes fresh."
Tijuana Flats' next location to open in September will be a restaurant front in Raleigh, N.C., which Blackwell said is its second North Carolina-based store; the is in Charlotte.
"Beyond the Southeast, I can't say what's to come," she said. "Ideally of course, we'd like to be everywhere, but right now we're moving further into the North Carolina market, so we'll eventually go in and put more locations in the Raleigh and Charlotte areas. We've also saturated South Florida. We recently opened three locations: one in Miramar, before that was Coconut Creek and before that was Wellington."
Eventually, Tijuana Flats hopes to expand into Palm Beach, but Blackwell said that the restaurateur already has a presence in Sunrise, Cooper City, Pompano and Deerfield - all populated areas in Broward County.
After it opens in Raleigh, Tijuana Flats will open its doors in Sarasota, Fla. in October, and by the end of 2009, it will have added 10 new locations to its repertoire.
Tijuana Flats primarily utilizes local store marketing, and relies heavily on word-of-mouth recommendations to get the word out about its unique concept in new areas.
"Our advertising is going to expand slightly," Blackwell said. "We just recently did a direct mail piece, which is something we don't normally do with a whole lot of couponing, and we ran that for three months in a new market."
Our source even visits local businesses in the areas where Tijuana Flats is planning a store opening in an effort to drive brand awareness by providing free food. She said that Tijuana Flats is so confident that people will be hooked once they try the food that the company doesn't mind shelling out the initial cost for them to taste the product.
"These markets are so different - for example, you can't compare a South Florida Tijuana Flats to a Raleigh Tijuana Flats. It's very different people, so it's a matter of being flexible and able to tier it and I get involved with the chambers (of commerce), we're so very community-driven," Blackwell said. "We're about building relationships and helping out, and that's why a lot of customers come back for an experience."
Being a Tex-Mex chain has its advantages. Tijuana Flats' demographic is all over the map and ranges from the soccer mom to the college student and everyone in between.
"There's really no limit, so from a marketing perspective, we really don't discriminate at all," Blackwell said. "Sure, if we're going to pick a radio station to do promotions with, we'll pick the alternative rock station because it's in line with our 'anything goes' approach, but as for my efforts when I'm out in the field visiting people to talk about Tijuana Flats, I have no preference, personally."
While Tijuana Flats' outreach is almost completely a grassroots effort, Blackwell said that every so often, the company will use local publications, and even more so if they pertain to local schools or communities. In South Florida, the company saw great success with its gift card program, and although the company has ideas for each market, Blackwell said she's not entirely certain of its marketing mix moving forward.
According to Blackwell, Orlando-based Push serves as its agency of record, and handles all of the company's marketing, advertising and media buying at this time. To date, she said that Tijuana Flats has yet to outsource any projects because a majority of them are done in-house.
"Obviously, we kind of count on our ad agency to know those things for us and to assist us with those, but we do a lot of our own things because we're out in the field seeing what's going on and shaking hands with people that live in those areas," she said.
When Tijuana Flats opens in new markets, whether there's brand familiarity or not, the company will most often implement some marketing to bring people in the door, but once they've figured out who is visiting the restaurant more frequently, the company begins to put together a more targeted approach.
"We open the store and sometimes our creativity comes after that, when we've got a feel for who's coming in our doors," Blackwell said. "Why throw money against the wall in each direction just to realize you didn't do it right?"

ORLANDO, Fla. (August 17, 2009) - Tijuana Flats Burrito Co. announced today several executive changes, including Chief Executive Officer J. Camp Fitch passing the torch to coowner and Chief Operating Officer Brian Wheeler.
As part of the changes, Camp will now serve as chairman of the Tijuana Flats Board of Directors, which also includes Brian and the company's Chief Financial Officer, Chester Wheeler. Rick Van Warner, president of The Parquet Group and a longtime consultant to the company, will join the board as an outside director.
With Brian now assuming the CEO position, Tony Sperrazza joins the company as director of operations. A seasoned restaurant leader, Tony will oversee all restaurant operations and guide the efforts of the companyʼs area supervisors.
Tijuana Flats also announced the promotions of Jeffrey Rettig, Sr. and Nicole DiPietro - both veteran Tijuana Flats executives - to vice president roles, with Rettig overseeing the companyʼs human resources department and DiPietro overseeing the finance department.
"Tijuana Flats has become so successful because of the hard work and dedication of Nikki, Jeff and all of our teams both in the restaurants and in the corporate office," Camp said in announcing the changes. "These are the folks that work behind the scenes to make our culture special."
A 20-year industry veteran, Tony most recently headed operations at a Tijuana Flats franchise location. His experience includes operations in various restaurant chains including Chevyʼs, Rio Bravo, El Torito and Casa Gallardo.
"Weʼre excited to add Tony to the team - heʼs an experienced operator and excellent leader," Brian said. "These changes reflect the ongoing growth and success of our brand and company."
Before joining Tijuana Flats in 2004, Jeff Rettig owned and operated a restaurant business recruiting firm. He previously served as human resource director for the Metromedia Restaurant Group, the former owner of restaurant chains including Ponderosa Steakhouse, Steak & Ale and Benniganʼs.
Since 1997, Nicole DiPietro has worked in the Tijuana Flats finance department in positions of increasing responsibility. A member of the original Tijuana Flats restaurant on University Avenue in Winter Park, Fla., Nikki holds an MBA degree from the University of Central Florida.
Before launching The Parquet Group in 2000, Rick served as an executive at Darden Restaurants, Inc. Before that he spent several years as editor-in-chief and associate publisher of Nationʼs Restaurant News, the weekly newsmagazine covering the national restaurant industry.
Both Camp and Brian said they expect a smooth transition over the next few months.

Science teachers tell us that nature abhors a vacuum. Evidently, so do some quick service food chains.
Ergo, to fill the "vacuum" that was Ocala, Tijuana Flats- an Orlando-based Florida Tex-Mex chain - has come to town. Its 68th unit opened today in the Berkshire Oaks plaza at 3950 S.W. College Road just west of I-75.
"We're in Gainesville," says founder Brian Wheeler. "So we wanted to fill in the space between there and Orlando. We knew this would be a great place."
Tijuana Flats features a range of Tex-Mex selections: chimichangas, tacos, flautas, quesadillas, burritos. Each order is made fresh to order in the Flats kitchen and brought to your table.
Meanwhile, you savor samples of 15 sauces ranging in Scovilles (the measure of "hot" in peppers) from "sissy" to "Oh, lord, don't take me now!" to season your selection.
Many of them are called "Smack my [insert crude term for donkey here] and call me Sally."
"We're excited to be here," Wheeler adds.

Tijuana Flats Burrito Co. has seated a new board of directors, as well as a
new top executive.
The Winter Park-based restaurant chain announced Chief Operating
Officer Brian Wheeler, a co-owner, will become the company's chief
executive officer. Meanwhile, former CEO Camp Fitch will now serve as
chairman of the firm's board of directors, according to a news release.
Along with Fitch, the firm's board also includes Wheeler and Chief
Financial Officer Chester Wheeler. Rick Van Warner, president of Winter
Park-based restaurant consulting firm The Parquet Group LLC, also
will join the board as an outside director.
Other changes on the company's executive team include:

Stephen Martin is touting a funky-themed Tex-Mex restaurant chain as his way of beating back the recession. And get this: he's even growing sales and opening new stores.
Stephen Martin is as meticulous as they come, right down to his neatly cropped mustache, pressed shirts and dapper khaki shorts.
So why is Martin, the onetime head of operations for half of a $200 million restaurant company, allowing and encouraging the staff of his Tex-Mex themed restaurants in Pinellas and Sarasota counties to wear visible tattoos and body earrings to work? Several cashiers have both nose and lip rings.
Call it Martin's recession survival plan: The few, the proud, the pierced.
"As long as they are sincere about service and take care of people," says Martin, "I don't care."
What Martin does care about is connecting customer's experiences to growing sales, something he has done with piercing precision the last seven years. The owner of six Tijuana Flats Burrito Co. stores on the Gulf Coast, Martin has used his philosophies mined from 30 years in the hospitality industry to come up with a few must-dos, from realizing the critical importance of location to never taking the competition lightly.
And those truths have proven to be the perfect antidote to the recession. Martin's six stores, under the Sarasota-based entity Hot Restaurants, combined for more than $7 million in revenues in 2008, including a trio of restaurants that surpassed $1.3 million a piece. That was a company-wide sales increase of about 10% over 2007.
Sales are also up this year, just under 10%. Martin says for as tough as the recession has been on fast-casual restaurants like Tijuana Flats, even slight growth is a major accomplishment.
Indeed, business is so good at Martin's six Tijuana Flats locations that he's seizing the recession to open a seventh restaurant, in a former used CD store on Clark Road in Sarasota. Not only is Martin confident he has the right internal plan to succeed, the economic downturn has created a renter's market.
That in turn has allowed Martin to pounce on a low lease rate on the 1,800-square-foot store.
Martin plans to open at least two more stores in 2010 and after that, possibly move into Manatee County, the third leg of the development agreement he holds with the Tijuana Flats corporate office.
Need more fun
The Tijuana Flats story is a made for Hollywood entrepreneurial tale and one of the reasons Martin bought into the concept in the first place. Entrepreneur Brian Wheeler founded the chain in 1995, soon after he graduated from the University of Central Florida.
Even though Wheeler had never worked in a restaurant before, he enjoyed being a customer at many of the college pubs in and around Orlando. And he thought his idea of building a Tex-Mex restaurant around funky named hot sauces and with an even funkier inside vibe, would be a hit.
On those sauce names, think really funky, like one of its more famous bottles: Smack My Ass and Call Me Sally.
Wheeler, armed with a $20,000 loan from his parents, opened his first store in Winter Park. By the next year he was running a side business that sold the sauces to other stores and eateries.
And by 1998, Wheeler had opened two more restaurants. Things were going so well that he soon hired Camp Fitch, a national hospitality executive who had recently retired from overseeing an 800-strong restaurant group that included names such as Bennigan’s and Steak & Ale.
Tijuana Flats has since grown to more than 70 restaurants in Florida and four other states, with another 30 in development.
And for Martin, the buy-in part is literal: In 2002, Martin emptied his 401(k) and other savings totaling $300,000 to buy into a partnership with Maitland-based Tijuana Flats for two stores, one in downtown St. Petersburg and one just south of downtown Sarasota.
Martin, who was born and grew up on the east coast of Florida, had been working in the Atlanta office of Metromedia Restaurant Group, a subsidiary of the restaurant conglomerate run by Fitch. Martin oversaw the operations side of more than 50 Steak & Ales, a difficult job as the chain was struggling to gain market share in the late 1990s.
"The last two or three years there all I did was close restaurants," says Martin. "It wasn't fun."
Martin also longed to get back to Sarasota, where he went to college and began his hospitality career in the 1970s as a bartender at the Steak & Ale on Tamiami Trail.
Around the time Martin was at his end with Steak & Ale, he received a call from Fitch, his former boss and mentor. Fitch wanted to know if Martin wanted to get in at Tijuana Flats.
Martin visited a few stores in and around Orlando and Gainesville and was hooked, both on the concept and the employees. He signed a deal with Tijuana Flats for the development rights for Manatee, Pinellas and Sarasota counties. Says Martin: "Every employee I talked to said this is the greatest place to work."
Getting cocky
Martin's first move with his development deal was to tinker with the corporate office's location formula. At the time, most Tijuana Flats were located in Publix-anchored strip malls and other shopping plazas. That was to bring down the rent - often one of a restaurant's top expenses after food and labor costs.
Martin, however, thought he needed to be in the middle of the action to increase his sales potential. So he found a spot for one Tijuana Flats on trendy 4th Street North in downtown St. Petersburg and a second location across the street from Sarasota Memorial Hospital.
The risk was that Martin was upping his rent by as much as 65%, from roughly $15 a square foot to $25 a square foot. "My thinking," says Martin, "was that I could pay another $1,500 a month in rent in return for another $20,000 a month in sales because of location."
The gamble paid off.
Martin's first two stores blew past initial sales expectations and he soon opened four other Tijuana Flats, one each in Largo, Tyrone, Pinellas Park and Oldsmar. Martin even admits that during the boom he got a little cocky because success was coming so quickly. "I was thinking I just can't lose," says Martin.
The recession brought Martin back to reality. He has spent a good part of his management efforts in the downturn preaching the importance of top-notch customer service. Customers are to always be greeted with a smile, trays are to be delivered and removed from tables and soda cups are constantly refilled.
Martin has even dabbled in the risky venture of offering price cuts and giveaways, long seen as solving a short-term problem with a long-term crisis because it could train customers to wait for a sale. In June and July, though, Martin embarked on a buy-one burrito, get-one free direct mail campaign - his first ever freebie promotion.
He says in the Sarasota store alone, he gave away $7,000 of burritos in June. A small price to pay, says Martin, as long it can turn into repeat customers. "It will get them in the door," Martin says, "but then we need to blow them away."
The recession has also unleashed Martin's inner fighter. For instance, when competing Tex-Mex chain Chipotle Mexican Grill announced plans to open a store couple of blocks away from Martin't Sarasota location, he didn't take it lightly.
He spent more than $10,000 renovating his store, focusing on little details such as fresh paint and new interior decorations. He held regular go-get 'em meetings with the employees. He directed shift managers to hyper-focus on plate presentation and the customer experience, down to greeting each customer who comes in the door immediately. With a smile, too.
"This isn't the time to skimp," says Martin. "Now is the time to overdo it."

So.. I definitely saved the best for last. This is Tijuana Flats, and I think it's the best Tex Mex chain around. The chain was created by Brian Wheeler, a former marketing student at the University of Central Florida. After spending lots of time in bars, he begged his folks for a couple dozen thousand dollars. He put it towards the first Tijuana Flats in Winter Park, Florida. All I have to say is: Thank you, Mr. and Mrs. Wheeler. The menu selection here is amazing, as well as the portions. They serve the best taco salad in a multigrain shell, and the chips are seasoned with awesomeness. What makes Tijuana Flats the greatest is it's restaurant feel. It's fast food, but sit down and enjoy it like a restuarant fast food. They have waitresses who refill drinks, greeters at the door, and phenomonal service all around. The environment also takes the taco (not cake...taco). All the walls are muraled, photoed, stickered, etc. to create the loudest environment possible. The hot sauce bar also beats Moe's salsa bar. To death. They offer dozens of sauces at a long table of sauce pumps, including one of the hottest in the world. In an unfortunate incident, I somehow squirted this sauce on my exposed leg. My skin, on my leg, burned for four hours. They sell a complete line of award winning hot sauces, so you can squirt it on your legs whenever you want!
An up and coming Tex Mex burrito bar, Machismo, has also sprung up in Virginia Beach, Norfolk, and Pennyslvania with franchising still available. Their big thing: VEGANISM. That's hardcore. I've yet to try it, but will definitely keep an eye out.

While many restaurants struggle to regularly reinvent themselves, Tijuana Flats retains it's uniqueness day-in-and-day-out by just being itself. . . different, in a strangely familiar kind of way.
(All Rights Reserved - Fred Roberts for "A Sarasota Minute") Have you ever found yourself watching a movie where you can't seem to figure out when and where the action is supposedly set?
The props and settings are familiar, but still, you can't quite put your finger on the particulars.
The device is used by directors to draw audiences in by making them feel at once comfortable and curious, familiar with the film's surroundings yet intrigued by them.
If the local dining scene has an equivalent of the experience, it's Tijuana Flats Burrito Company in Sarasota.
The music is decidedly retro, with hits from the 60s through 80s playing in the background but at a volume loud enough to be heard and appreciated instead of turned down to the point of being unrecognizable.
The colorfully painted walls give the place the laid back feel of a 1960's era college hangout like the Mellow Mushroom in Gainesville or the old Jabberwocky Cafe in Syracuse, New York on the Syracuse University campus. But the service is reminiscent of an even earlier era. Customers are greeted by the help as they enter. It's a throwback to an easier time, perhaps a family run diner from the '50s, even though piercings, up-to-date fashions and modern hair stylings clearly place the servers and counter help in the here and now. It's a refreshing contrast that adds to the retro-mod vibe of the place.
And the food? Well, the tacos, burritos, quesadillas and other south of the border favorites served at Tijuana Flats are head-and-shoulders above what usually passes for Mexican fare in these parts. And the "Hot Bar" puts this casual dining destination in a class by itself by adding a combustible, user definable flavor to the fare with an assortment of hot sauces that range in fieriness from the altogether tame "Sissy Sauce" to the five-alarm "Smack My Ass and call me Sally!"
Also adding to the "can't quite pigeonhole it" quality of the place, is the variety of clientele Tijuana Flats attracts. Students, doctors, lawyers, office workers, cops…they all seem to feel at home here.
So while many restaurants struggle to regularly reinvent themselves to keep their concept fresh, Tijuana Flats retains it's uniqueness day-in-and-day-out by keeping it simple and just being itself. . . different, in a strangely familiar kind of way.
